Bacchanalia (23A Coleman Street, Tel: 6509 1453)

Executive chef Ivan Brehm’s eight-course vegan tasting menu (S$90) requires two days’ advanced notice. However, you can choose from the Vegetable section of the a la carte menu that features scrumptious offerings like the Mushroom Fantasia, comprising a variety of mushrooms cooked in myriad different ways to yield layers of alluring textures and flavours.

St Pierre (#01-15 Quayside Isle, 31 Ocean Way, Tel: 6438 0887)

At this casual-chic, modern European restaurant, the eight- or 12-course (S$148 and S$178) tasting menu is available in a vegetarian or vegan option.

Jaan (Level 70, Swissotel The Stanford, Singapore, 2 Stanford Road, Tel: 6837 3322)

Julien Royer’s innate understanding of excellent quality produce comes through in his five- and 10-course (S$148/S$198) vegetarian menus that are available daily. Vegan menus are available upon request but require 24 hours advance notice.

Gunther’s (36 Purvis Street #01-03, Tel: 9010 3075)

Chef Gunther Hubrechsen parses his seasonal savoir-faire to a vegetarian tasting menu (price upon request, minimum two diners per table) and a three-course vegetarian set lunch (S$38).

Rang Mahal (Level 3, Pan Pacific Singapore, 7 Raffles Boulevard, Tel: 6333 1788)

Indian restaurants have long been the default choice for vegetarians in search of a flavourful meal, but Rang Mahal takes it up a notch by combining western ingredients with Indian spices to yield beguilingly complex creations such as smoky tandoori Portobello mushrooms dusted with earthy chaat masala and cheddar cheese (S$32).

Pollen (Flower Dome at Gardens By The Bay, 18 Marina Gardens Drive #01-09, Tel: 6604 9988)

Its location always makes for a special evening whether or not you choose the S$120 vegetarian tasting menu or from the a la carte vegetarian options. Expect light, clean flavours in dishes such as Gorgonzola consomme with pears, port jelly, artichokes and truffle toast.

Stellar at 1-Altitude (Level 62, 1 Raffles Place, Tel: 6438 0410)

Chris Millar’s Gastronomic dinner tasting menu offers a five-course vegetarian option for S$110 or a la carte dishes such as truffle gnocchi with French asparagus and a soft poached egg or a twice-baked Gruyere souffle with truffled frisse salad.
