SINGAPORE — The MBS Epicurean Market opened today (Sept 12) and judging from the early crowds, there are already a few favourites.

Foodies made a beeline for familiar signature dishes like Sky on 57’s foie gras xiao long bao and Waku Ghin’s marinated botan shrimp with sea urchin, which Tetsuya Wakuda himself told us a must-have if you could only try one dish from his booth.

But don’t overlook new chefs, too. David Thompson debuted dishes from his new restaurant Long Chim such as prawns with turmeric rice which was quite a hit. Here are seven other dishes for your consideration.

1. DB BISTRO MODERNE’S NEW YORK HOT DOG (S$8). Daniel Boulud’s popular gastrobar DBGB is in New York but you can still get a taste of the popular hot dogs, which have been specially made for the event. It’s a certified wiener — oops, we meant winner. There was a satisfying snap with each bite of the homemade beef dog that goes perfectly well with its mustard ketchup sauce. If you prefer a more upmarket meat selection, there’s also the charcuterie selection from Bar Boulud.

2. DAVID MYERS GREEN PAPAYA AND COCONUT SHOOTER (S$8). The LA-based chef looks and talks like a rock star, and we’re happy to report the dishes we tried pretty much rocked, too, in particular the Green Papaya and Coconut Shooter. It reminded us of a very mild, sweet and fragrant green curry, but it was almost dessert-like with its light, custardy texture. We overheard someone commenting: “Like bubur cha cha but nicer!”

3. PUNJAB GRILL’S BUTTER CHICKEN (S$8). We’ve all had butter chicken but how about one served in a tart form? This was tasty as it sounds. The butter chicken was rich, full-flavoured and, if you asked us, just a littler daintier to consume when you’re standing around.

4. PIZZERIA MOZZA’S AGLIO OLIO PIZZA (S$12). We don’t know about you but anyone who can take the simplest of ingredients — dough, cheese and garlic — to create a pie so fine deserve the James Beard Award. Actually, that would be American chef Nancy Silverton, who’s in town just for this event. We might have imagined it but the pizza crust exceeds its usual quality. And that’s saying something.

5. RISE’S SUMMER STRAWBERRY AND MINT WAFFLE (S$4). Since waffles are all the rage now, choose this for your dessert. The restaurant turns out a decent, fluffy waffle that’s topped with a refreshingly delicate mint Chantilly cream. Yum.

6. WAKU GHIN’S MUSK MELON (S$15). We know, we know. It’s 15 bucks for a slice of melon. But this is no ordinary melon as Waku Ghin gets theirs from the same farm that caters to the Japanese royal family. Since these melons could cost up to more than S$100 each, we figure S$15 for a taste of royalty ain’t too bad, right?

7. CARNE MEATS BY INDOGUNA’S TIROLER SPECK (S$5). This booth was packed when we were there as customers were eager to snap up the wallet-friendly range of cured meats and sausages prepared by their master butcher. While you’ll have a field day with their chorizo and salami, we like the more unusual Tiroler Speck (cold-smoked ham cured with juniper and other spices) that would be the best thing to go with some alcohol.

The Epicurean Market is on until Sept 14 at the Sands Expo and Convention Centre, Basement 2, Hall D & E. For more info, visit http://www.marinabaysands.com/epicurean-market
