SINGAPORE — New teppanyaki restaurant Teppan-Ya, which took over the former Wasabi Bistro at Mandarin Oriental, is an elegantly designed space, dressed in clean lines and warm muted tones that allow the view of the dazzling bay and city skyline to shine.

The menu is also more elegant than the casual haunts we’re used to. Lunch sets start at S$56 for the chicken course and S$78 for beef tenderloin or seafood. For something more luxurious, opt for the Australian wagyu beef course at S$120. We requested ours done medium rare, which came perfectly seared and still blushing pink in the middle. The famously well-marbled beef was delicately seasoned and its texture utterly succulent. You can also choose to enjoy the beef with accompanying dipping sauces.

With the lunch set, you get a mixed green salad, as well as teppan veggies comprising mushroom, zucchini, asparagus and capsicum, all given the smoky treatment and a sprinkling of salt. It comes with the standard chawanmushi and miso soup. For your carb fix, an additional S$5 gets you aromatic garlic fried rice tossed with egg.

If you are dining in a group, you can add more meat, seafood and vegetables from the a la carte menu. Among the items, the seared slices of Scamorza cheese (S$18) come highly recommended. The restaurant offers sashimi, sushi and tempura, alongside unique items such as its signature Kumi No 1 (S$13.50).

This creation comprises crabmeat, avocado and soft white fish moulded into a dome, topped with a tasty cheese sauce and baked until golden brown. Alternatively, share the rainbow sushi (S$25.50), comprising large rolls of perfectly cooked rice, crabmeat and avocado, draped with glistening tuna and salmon.

Round up your experience with the dessert list, which includes uniquely Japanese treats such as kinako-mochi (S$12), sticky rice cake with sweet soya bean power, and azuki zenzai (S$13), a traditional bean soup with sticky rice cake.

Service here is refined and attentive: Expect your tea to be changed when it gets too cool and your plates cleared promptly. And don’t worry about smelling like your dinner, the ventilation here works just fine.

Teppan-Ya makes this casual style of cuisine a lot more accessible and dinner courses that start at S$98 are more extensive as they include sashimi or tempura. NAOMI ZIYI
