Singapore does well on Asia’s Best Restaurants List

SINGAPORE — Chef Andre Chiang can breathe easy.

He’s managed to defend his spot on the Asia’s 50 Best Restaurants list. In fact, he’s done better. He nudged up one notch from third place, to take the No. 2 spot on the list, which was first launched in 2013.

Restaurant Andre has been on the list for five consecutive years, climbing steadily from sixth place, year by year. 

Taiwan-born and French-trained chef Chiang shared what it means for the restaurant to be at second place this year. ’Team effort’ may sound cliché but for me, ‘Best restaurant’ means ‘best brigade’, and I truly believe I have the best brigade, therefore I have nothing more to ask for," he said.

The restaurant is based on Chiang’s philosophy of "Octaphilosphy", which takes into account  eight elements of gastronomy: salt, texture, memory, purity, terroir, south, artisan and uniqueness. The menu also changes according to seasonality, with the best ingredients arriving on the day. 

According to Chiang, since Restaurant Andre opened in 2010 in a small three storey building at Bukit Pasoh Road, it has “achieved tremendous support from our guests and international accolades". When asked about what’s next, he responded, “every year we push harder than the previous year. We strive to give Singapore and Asia an iconic restaurant like no other.”

Three restaurants took top spots on the Asia’s 50 Best Restaurants list — more than any other city. Coming in at No. 9 is Odette, while Burnt Ends took the No. 10 spot.

The annual list is compiled based on votes of 300 food writers, critics, chefs and others, who are asked about their best restaurant experience, according to William Reed Business Media, which also publishes the World’s 50 Best Restaurants list.

“To be presented with an entry into the list a year into our opening is an unexpected vote of confidence and an absolute honour especially when it is an acknowledgment from our peers in the industry.” said Julien Royer, Chef-Owner of Odette.

“This award is first and foremost a recognition of the outstanding skills and talent of the young team at Odette. I am most lucky to have an incredible team whose heartfelt dedication has been instrumental in consistently delivering the Odette experience,” said Royer. 

Established in collaboration with The Lo & Behold Group, Odette offers a constantly evolving menu showcasing globally-sourced produce and classic French culinary techniques. 

“2017 will be an exciting year for the restaurant, and as we continue to grow and evolve, I hope to continue in this endeavour to nurture and inspire another generation of chefs,” He added. 

Les Amis, Waku Ghin, Corner House, Tippling Club and Jaan took spots throughout the top 50.

Located at Tanjong Pagar, the popular Tippling Club rose to 27th place this year and was first inducted into the Asia’s 50 Best Restaurants list in 2014 at 23rd place.

Chef-Owner Ryan Clift said: “We created Tippling Club with very little, in a very different time. To have Asia’s 50 Best Restaurants acknowledge us for what we stood for in 2014, and to have been on their radar over the years, is such an incredible affirmation to the hard work and creativity that my team—both past and present—has put into every dish and drink we serve."
