Chef Of World’s Best Restaurant Mirazur Serving $10 Burgers In S’pore Soon

Now here’s a new burger joint with some serious culinary cred: Carne, opening in Singapore on 25 February, is helmed by Argentine chef Mauro Colagreco, whose restaurant Mirazur in France was awarded #1 on the S. Pellegrino World’s 50 Best Restaurants list. Mirazur also boasts three Michelin stars. The celebrated chef first opened casual burger bar Carne in Buenos Aires in 2015, and Singapore is the only country where he will have an outpost outside of Argentina (which has a total of six outlets). Carne (pronounced car-neh , meat in Spanish) serves gourmet burgers starring sustainable ingredients.

The Singapore outlet is opened in partnership with The ilLido Group by Singapore-based Italian restaurateur-chef Beppe De Vito, with plans to open a couple more outlets and cloud kitchens here.

“Singapore is a very special country for me, as it was here I received the number 1 title for Mirazur from World’s 50 Best Restaurant in 2019,” shares Mauro.

But who will supervise the cooking at Carne here since travel restrictions due to the pandemic has made it difficult for Mauro to personally visit Singapore to train the team? “The local team is led by ilLido Group’s Beppe De Vito and Group Executive Chef Daniele Sperindio. Since last year, they have been working with Mauro and his team very closely over virtual sessions and exchanges on the development of the menu and concept. There is also a precise set of protocols and recipes, which the team here follows strictly,” shares the restaurant’s PR rep. That being said, there are plans for Mauro to come to Singapore this June, if there are no travel bans.

The self-service “80-seater smart-casual” restaurant will open on Amoy Street, in a restored heritage shophouse. It is the world’s first hamburger chain to become a Certified B Corporation, a triple impact certification (social, environmental and economic) for businesses committed to doing better for the world, thanks to its commitment to using sustainable produce and encouraging recycling by giving 50 cents off every takeaway order when diners bring their own cups or containers.

There’ll be an all-day menu of about seven types of made-to-order burgers, sides, milkshakes, local craft beers, and a healthy breakfast selection. Prices start from $13 for a Junior Cheeseburger (slightly smaller than the other burgers) with locally-baked brioche buns, free-range grass-fed Argentine beef, cheddar cheese and goes up to $28 for a Complete burger which is basically a pimped up beef cheeseburger with crispy smoked hormone-free bacon, cheddar cheese, local egg, organic red onion and pickled organic cucumber.

The Fries ($8.90) are made of Agria potatoes using a unique thrice-cooked technique proprietary to Carne, and served with organic, house-made mustard and ketchup while the salads ($15) feature local greens and seasonal organic vegetables.

As part of its opening special, Carne will offer discounted burgers on the first four days: from 25 February to 28 February, 11am onwards. The Complete Burger (pictured, usual price $28) will go for just $10 each for the first 50 customers per day. And for every burger purchased at the regular a la carte price during the same period, there will be a complimentary upgrade to a full combo set that includes fries and a soft drink. Both valid for dine-in and takeaway.

There will be two burgers created for the Singapore restaurant: The “Beef and Chimichurri Burger” ($24) in tribute to Carne’s Argentinian roots with house-made chimichurri sauce, and the “Crispy Chicken Burger” ($18), with locally-sourced, GMO-free poussin chicken thigh with fresh green cabbage, chilli pickled organic cucumber and organic Greek yogurt dressing.

    The milkshakes are “hand-blended, using house-made ice cream that are made from natural ingredients and without preservatives”. Meanwhile, the coffees and organic teas are from fair-trade sources, and craft beers include local brands such as Trouble Brewing, Brewlander, Off Day Beer and Crust Brewing.
